Marushima Shoyu produces organic soy sauce certified under the Japanese Agricultural Standards. Using Japanese organic soybeans and wheat, and sun-evaporated salt, they brew according to a traditional method in which the ingredients are slowly fermented in cedar barrels having a capacity of 5400 liters.
In 1960, Marushima Shoyu adopted a completely natural method of producing soy sauce without the use of any preservatives, food coloring or sweeteners based on guidance from George Ohsawa, the world-famous founder of macrobiotics. They are the only soy sauce producer in the world to have personally received guidance from George Ohsawa.
A well respected producer and seller of foods, Marushima Shoyu produces sauce products such as organic soy sauce, soy sauce without genetically modified organisms, flavored soy sauce, yuzu ponzu, mentsuyu (for noodles), and dashi tsuyu sauce, as well as powdered dashi (broth), iriko (sardine) dashi, konbu dashi, herb salt products and tsukudani.
